Cheese Stuffed Chicken Breasts with Peri Peri Sauce

Ingredients
4 x Chicken Breasts
2 x Pureety Peri Peri Sachets
120gm x Breadcrumbs
100gm x Mozzarella (Grated)10gm Crushed Garlic
10ml x Olive oil
50ml Fresh Cream
Preparation
Pre-heat oven to 180 C
Combine the grated mozzarella cheese with 1 Pureety Peri Perisachet, and the breadcrumbs.
Next slice each chicken breast lengthways, creating a pocket, and into this spoon the cheese and breadcrumb mixture.
To make the sauce for the chicken pour 1 Pureety Peri Peri Sachet into a small saucepan and add the double cream.
Cooking Method
To cook the chicken, heat up a striped griddle pan on a high heat until smoking hot.
Liberally spread olive oil over the chicken breasts and place in the pan until browned.
Then turn over each breast using tongs and place in the oven for 12-15 minutes, or until cooked through.
Warm through the sauce on a medium heat and when the chicken breasts are fully cooked remove from the oven, and place on serving plates.
Pour heated sauce over the top of each breast.
This dish is excellently accompanied with green boiled vegetables, or a selection of vibrant, quick stir-fryed vegetables.
