Crispy Peri Peri Chicken Pieces

Ingredients
1 x Sachet of Pureety Peri Peri Sauce
4 x Chicken Breasts (Skinned and sliced into large, thick strips)
12 x Cream Crackers
2 x Lemons (Zested)
40g x Butter
3 x tbsp Plain Flour
2 x Eggs
Preparation
Preheat the oven to 180 C
Blend the cream crackers, lemon zest and butter in a food processor until very fine. Add a good pinch of salt and pepper if required. Pour the mixture onto a deep plate.
Combine the eggs and Pureety Peri Peri sauce, and pour onto another deep sided plate.
Onto a third deep sided plate pour the flour.
Then take the strips of chicken, and place into the flour, ensuring all pieces are coated on all sides.
Remove from the flour, and place into the egg and Pureety Peri Peri sauce mixture, again ensuring all sides are covered in the mixture.
Next remove from the egg mixture, and place onto the plate containing the cream cracker powder mixture, making sure all the pieces are generously coated in the mixture.
Remove and place on a non-stick baking tray.
Cooking Method
Place in the oven for 20 minutes, and serve immediately. These are delicious with french fries or roasted new potatoes.
