Grilled Salmon with Lime, Chilli and Honey

Ingredients
2 (6oz) x Salmon fillets
1 x Pureety Smoked Chilli and Blossom Honey Sachet
1 x Lime (Zested and juiced)
1/2tsp x Dried chilli flakes
1/2tsp x Fresh coriander leaves (Finely chopped)
Ground black pepper (To taste)
Preparation
Turn a grill on to the highest setting to pre-heat.
Firstly trim the salmon of any excess fat and/or pin bones.
Next, combine the rest of the ingredients (except the coriander) in a shallow dish and place the salmon fillets in the dish ensuring they are totally covered by the marinade.
Cover the dish with clingfilm and leave to marinate for 10 minutes.
Cooking Method
To cook the salmon, remove from the dish, wiping away any excess marinade and place on a metal tray under the pre-heated grill for 3-4 minutes on each side.
During the last 2 minutes of cooking time, pour any excess marinating liquid left in the tray over the salmon fillets.
To serve, place the fillets of suitable serving plates and spoon the sauce over the top.
Garnish by sprinkling chopped coriander all over the fillets.
(These gorgeous salmon fillets are perfectly suited to being served with some wilted spinach and new potatoes!!!!)
