Peri Peri Chicken and Avocado Open Ciabatta Melt

Ingredients
1 x Small chicken breast (Sliced)
1 x Pureety Peri Peri Sachet
1 x Small avocado (Peeled, deseeded and diced)
1/2 bunch x Watercress (Washed)
5 x Cherry tomatoes (Halved)
1 x Stonebaked ciabatta
1tsp x Vegetable oil
50gm x Grated monterey jack cheese
Salt and pepper
Preparation
Pre-heat a grill to it's highest heat setting.
Heat the vegetable oil in a frying pan until smoking.
Add the sliced chicken breast, and fry for 3 minutes until browned. Then add the Pureety Peri Peri sachet.
Lower the heat, and simmer for approx 4 more minutes, until the chicken is cooked through.
Meanwhile toast the ciabatta under a hot grill, and combine the watercress, cherry tomatoes and avocado in a bowl and season with salt and pepper.
When the chicken is cooked, spread evenly between the 2 pieces of ciabatta and place the grated monterey jack cheese on top of each piece.
Place the ciabattas back under the hot grill to melt the cheese.
Then place each ciabatta on an individual serving plate, and top with a generous handful of the avocado salad.
