Peri Peri Chicken Enchiladas

Ingredients
2 x Chicken breasts (Pre-cooked)
1 x Pureety Peri Peri Sachet
1 x Red pepper (Sliced)
1 x Small red onion (Sliced)
2 x Flour tortilla wraps
50gm x Cheddar cheese (Grated)
1 x Garlic clove (Finely chopped)
1tbsp x Vegetable oil
Preparation
Begin by pre-heating a grill to its highest setting.
Next slice the chicken breast and set aside.
Cooking Method
To cook the dish place a frying pan over a high heat and add the vegetable oil.
When the pan is smoking, add the red pepper, red onion, and garlic and fry for 4 minutes.
Then add the sliced chicken and fry for a further 3 minutes.
Remove the pan from the heat, split the mixture in half and spoon on each tortilla wrap.
Next fold the tortilla wraps so they form cylindrical shapes and place on the serving plates and pour the Pureety Peri Peri sachet all over both tortilla wraps.
Top both wraps with cheese and place under the hot grill until the cheese is melted.
Remove from the grill and serve. (Take caution though as the plates will be hot!)
This dish is great served simply with rice or spicy potato wedges.
