Peri Peri Chicken Pitta Bread Pizza

Ingredients
1 x Pureety Peri-Peri sachet
1 x Chicken breast
2 x Pitta breads
30ml x Tomato puree
1 ball x Buffalo mozzarella cheese
1tsp x Dried oregano
1tbsp x Olive oil
Preparation
To prepare the dish place the chicken breasts in a plastic bowl and cover with half the Pureety Peri-Peri sauce sachet. Cover with cling film, place into a fridge and leave to marinade for a minimum of 2 hours.
Then preheat an oven to 180C and preheat a grill to its highest setting.
Meanwhile combine the rest of the Pureety Peri-Peri sauce sachet in a small bowl with the tomato puree and set aside.
When the chicken has marinated, place it onto a non stick tray and roast for 20 minutes in the oven and return to the fridge to cool.
Once the chicken has cooled it should then be sliced and set aside.
To make up the pizzas the pitta breads should be placed onto a suitable grill tray and the peri peri sauce mixture should be generously spread over and topped with the cooked chicken pieces.
The mozzarella cheese should then be thinly sliced and placed over the chicken and oregano and olive oil should be sprinkled over to taste.
Cooking Method
To cook the pizzas they should be placed under the hot grill for 7-8 minutes or if a grill is not available it should be placed in the hot oven for 10-12 minutes.
To serve the pizzas they should be placed on suitable plates alongside a crisp salad and are ideal with a glass of white wine.
