Warm Duck and Green Bean Salad with Soy Ginger and Garlic

Ingredients
2 x Duck breasts
1 x Pureety Soy Ginger and Garlic sachet
75gm x Green beans
1 x Oakleaf lettuce
1 x Endive lettuce
1 x Radicchio lettuce
1tbsp x Vegetable oil
Preparation
Firstly prepare the dish by trimming the duck breast and setting aside in a fridge.
Then pull apart, wash and dry the lettuces, discarding any roots and brown leaves or outside leaves.
Finally pre-heat and oven to 180C.
Cooking Method
To cook the dish firstly bring a large saucepan of water to the boil and add the green beans and cook for 5 minutes. Then remove from the water and place into a bath of ice cold water, or under cold running water.
Next place a frying pan over a high heat and add the vegetable oil.
When the oil is smoking add the duck breasts, skin side down and fry for 2-3 minutes. (Take great care here as the oil will be very hot!)
Next using tongs turn the duck breasts over and place the duck breasts into the pre-heated oven and cook for 8-10 minutes.
During the last 2-3 minutes of cooking remove the duck breasts from the oven and pour the Pureety Soy Ginger and Garlic sachet over the breasts and return to the oven for the remaining 2-3 minutes.
Finally serve the dish by placing the washed lettuce and green beans in 2 salad bowls and top with the warm duck breasts and spoon over any remaining sauce from the pan over the breasts.
